Carmelitas are pretty much the best thing you will ever put in your mouth! I can have so much willpower on a diet but the second you put some of these in front of me I will eat the entire pan.
The best part is they are so easy to make and don’t require a ton of ingredients or steps….Hello lazy chefs! 😉
3/4 cup butter, melted
3/4 cup light brown sugar
1 tablespoon vanilla extract
1 cup all-purpose flour
1 cup old fashioned oats
1 teaspoon baking soda
1 jar of carmel (I just grab the kind with the ice cream sundae toppings)
1 bag semi-sweet chocolate chips
1 Preheat oven to 350F. Line a 8×8 inch pan with foil and spray with cooking spray.
2 In a microwave safe bowl add the butter and heat to melt.
3 Add the brown sugar and vanilla and whisk until smooth.
4 Add flour, oats, baking soda, and pinch of salt and stir until combined. Mixture will be thick.
5 Add half the mixture to pan and smooth it out to create an even layer.
6 Bake for 10 minutes.
7 Microwave caramel until its easy to pour.
8 Sprinkle chocolate chips onto the baked layer and then drizzle generously with melted carmel.
9 Evenly crumble remaining oatmeal mixture onto the top.
10 Bake for 15-20 minutes or until edges are lightly browned and center is bubbling.
11 Allow bars to cool completely in the pan before slicing. I typically make these the day before to give them plenty of time to cool.
